Salmon ‘Sushi’ Bowl

A salmon sushi bowl is a delightful and nourishing meal that brings the flavors of sushi right to your dinner table, without the fuss of rolling. It's like a hug in a bowl!

Ingredients (serves 2)

  • 1 x 250g pack of microwaveable brown rice

  • 15ml rice vinegar

  • 15g sugar

  • 2.5g salt

  • 2 x salmon fillets

  • 1 avocado

  • 1 cucumber

  • 1 carrot

  • 20ml soy sauce (optional)

  • 30ml mayonnaise

  • 10ml sriracha sauce

  • Optional: seaweed strips, sesame seeds, pickled ginger

Instructions:

  1. Prepare the Salmon: Preheat the oven to 180 degrees C (fan) and put the salmon onto a baking tray. Drizzle over a little soy sauce to season. Put into the oven for approximately 12 - 15 minutes until cooked to your liking.

  2. Prepare the Rice: Warm up the rice according to the packet instructions. In a small bowl, mix rice vinegar, sugar, and salt. Stir this into the cooked rice while it's still warm.

  3. Assemble the Veggies: Dice the avocado, cucumber, and carrot.

  4. Build Your Bowl: Start with a base of sushi rice. Add the cooked salmon and arranged veggies on top. Feel free to add seaweed strips, sesame seeds, and pickled ginger for extra zing!

  5. Drizzle and Serve: Mix mayonnaise and sriracha sauce together and drizzle over the bowl.
