Spinach & Feta Puff Pastry Tart

With the changing weather, Autumn is well and truly here. Around this time of year I usually switch from salad based meals over to more warming, filling dishes. This week, I made this delicious spinach and feta puff pastry tart which is super simple to make with only 4 ingredients. I served it alongside some roasted new potatoes and a rocket salad. It might also keep for an easy on-the-go lunch.

Serves 2

Ingredients

120g spinach

50g full fat soft cheese

120g all butter ready rolled puff pastry

100g feta cheese

Method

Preheat the oven to 220C / 200C fan / 425F / Gas Mark 7.

Boil a kettle.

Prepare the spinach by adding it to a colander and pouring boiled water over it until it starts to wilt. Rinse the spinach under the cold tap until it’s cool. Squeeze the water out of it and then chop it roughly.

Add the soft cheese to a small bowl and add 1 tbsp of boiled water to loosen. Season with a pinch of salt & pepper.

Line a baking tray with non-stick baking paper. Lay the puff pastry onto the lined baking tray. Score a 1cm border around the edge of the pastry with a nice - this will puff up and form a crust.

Spread the soft cheese mixture over the pastry (within the border). Spread over the chopped spinach and crumble over the feta.

Put the tray into the preheated oven for 25 minutes until the pastry is cooked through, puffed up and golden brown.

Serve with some little potatoes or a big salad.
