Sweetcorn, chilli and coriander fritters

This week, I randomly fancied some sweetcorn fritters - I made a batch and did 2 meals with them! I had them in this photo with a fried egg, roasted tomatoes, spring onions and a drizzle of sweet chilli sauce. Then later on I topped them with some roasted chicken with a salad on the side. They would be great with bacon and avocado too! They are super simple to make.

Serves 4

Ingredients

325g sweetcorn kernels

2 eggs, lightly beaten

100g plain flour

1 tsp baking powder

2 spring onions, trimmed and finely sliced

1 red chilli, deseeded and chopped

handful coriander, chopped

Method

In a bowl, combine the sweetcorn kernels with the egg, flour, baking powder, spring onions, chilli and coriander. Season.

Blitz half the mixture in a food processor, then combine with the remaining, unblended mixture to form a batter.

Heat some oil in a large frying pan. Add 1 tbsp of the batter to the pan to form a fritter. Repeat until you have used all the batter. Cook for 2 minutes each side. Serve with whatever you fancy!
